Standing at the pick-up counter on opening night in a sea of order tickets and a 50 person line out the door, and Josh (co-chef) asking me “What did we do?”

Cats. They clean themselves, go to the bathroom in a box and are the silliest, funniest creatures to observe.

Coolest thing you’ve ever been for Halloween?

Paula Deen. I got to wear maternity jeans stuffed with a pillow, a silver white wig and carry a stick of butter around all night.

I know Michigan has the lake and sunsets and all that, but I gotta go Wisconsin – cheese curds, beer and fudge.

In high school I briefly worked at Hardee's which did nothing to prepare me for a career in graphic design which did nothing to prepare me to open a restaurant.

Rehearsal dinner for our wedding/1st dry run of the restaurant with our brand new staff (we got married two days before we opened). It was a triumphantly magical evening, they nailed it!!!

Kenny Rogers. We both love a good roasted birds, and I can ask him why the hell he didn't sing The Gambler at the live Christmas special I attended.

Au Pied De Cochon by Martin Picard. It's what keeps me husky.

Favorite things to eat:

Dim sum, a good prime rib sandwich, and fresh oysters the second they come out of the water.

Personal Hero:

My dad, he has more integrity than anyone I know.

Restaurant pedigree:

Studied culinary arts at The Cooking and Hospitality Institute of Chicago, worked in New Orleans for a while which is where I draw a good deal of my culinary influence from and I have worked everywhere from fine dining and hotels to counter service.

If I wasn't living the dream in Chicago I would be:

probably living on a houseboat in the Caribbean and having a small business on the beach that sold fresh simple seafood and cheap canned beer.

Interesting fact that you don't know about me:

I am quite a skilled juggler.
