Standing at the pick-up counter on opening night in a sea of order tickets and a 50 person line out the door, and Josh (co-chef) asking me “What did we do?”

Most memorable HBFC moment:

Rehearsal dinner for our wedding/1st dry run of the restaurant with our brand new staff (we got married two days before we opened). It was a triumphantly magical evening, they nailed it!!!

Kenny Rogers. We both love a good roasted bird, and I can ask him why the hell he didn't sing The Gambler at the live Christmas special I attended.

Au Pied De Cochon by Martin Picard. It's what keeps me husky.
